Healthy recipe with Zucchini – Tasty Zoodles

Are you one of those people who are  always looking out for healthy twists on classic dishes? Well, this healthy recipe with zucchini is just for you! It is gluten free and also qualifies as a vrat and sattvic recipe.   Awesome Zucchini noodles or Zoodles salad is a healthy twist given to the calorie loaded pastas( or noodles). It does not contain complex carbohydrates and can be had any time of the year! It is wholesome, highly nutritious, crunchy, tangy, light, gluten free and sattvic too. 

Zoodles Recipe

Zucchini noodles are super easy to make & the method is totally fool-proof. The only thing is a little time in making the zucchini strips, but one doesn’t mind as the rest of the process is very quick. Let’s get going!

It has three parts  

  1. Tangy sauce
  2. Zoodles
  3. Toppings

Tangy sauce Ingredients:

Tamarind paste ½ cup( replace with tomatoes when not fasting)

Dates -6 

Lemon 1.5 tsp

Sendha Namak( Vrat salt) 2 tsp

Oregano – 1.5 tsp

Fresh basil- 3 tbsp (or 1 tsp dry basil)

Lemon 1.5 tsp

Zoodles ingredients

3 Zucchini of medium size

A spiralizer( the spiralizer is a veggie slicer shaped like a big pencil sharpener.)

Making zoodles

Toppings Ingredients

Dates – a few cut pieces

Coconut shavings – fresh coconut strips 2tbsp

Basil – 2 tbsp

Cherry tomatoes – a few

Roasted Peanuts or cashews- ¼ cup

Method

  1. Insert the zucchinis in the spiralizer and turn them just like you would twist your pencil inside a sharpner’s hole.  You get awesome colorful green and white noodles!

2. Put all the ingredients of the tangy sauce in a mixer jar and blend. Do not blend too much, just pulse it.

3. Garnish with the toppings of coconut, dates, basil, roasted peanuts and cherry tomatoes.

4. Mix the zoodles with the tangy sauce and add the toppings. Salad is ready.

Nutritional value of healthy zucchini recipe

Using zoodles is also a great way to incorporate value & vegetables in your diet with lots of nutrients, vitamins and fiber. The dish is low in calories, and obviously gluten-free so if you are trying to cut back on carbohydrates, this is a way to go! This meal is super easy and totally fool-proof, the only part that can take a little time is processing zucchinis into strips.

The topping of dates and nuts lend protein and the good, healthy fats. It makes this salad a complete meal-   healthy and delicious 😋.
